Rai, also known as Mustard Greens, is a leafy green vegetable with large, slightly wrinkled leaves that have a deep green color.
The plant grows upright and has a distinct mustard aroma. The stems are thick and juicy, while the leaves have a peppery, mildly bitter flavor.
Rai plants also produce small yellow flowers and tiny round seeds known as mustard seeds (rai dana).
